Fresh Take on Minestrone Soup

A warm, comforting bowl of soup is perfect on a chilly day for lunch or dinner. Now that it’s finally feels like Winter in New York City, I like to make a large batch soup for Hubby and me to have for the week.

I made Rachel Khoo’s fresh take on Minestreone Soup. Her recipe is very flexible, and you can add whatever you have in your fridge and/or cupboard. It’s also fun and simple to make, especially in advance. It was so delicious, warm and comforting.

Cuban Lunch at Margon

Pressed for time but in need of a filling, comforting lunch, I like to go to Margon in Midtown West in Manhattan. It’s less than a 10-minute walk from my office, and whenever I arrive, the staff members recognize my face and always give me my order in 15 minutes or less.

Kopitiam in Chinatown

I discovered Kopitiam, this hidden gem, during one of my walks in Chinatown. It’s a small “stop and go” place that serves typical Malaysian dishes for breakfast and snacks. It’s run by a Malaysian family, and their kitchen is the size of my bathroom…Tiny! Resourceful, creative…their food has to be authentic and good. I made a mental note to return.

I went back and fell in love with the place. My prior thoughts were also correct. This is now one of my top 10 places in Chinatown.
