The Rainbow Bagel at The Bagel Store 

Scott Rossillo’s Rainbow Bagel had been on my “Must Try” list since the beginning of this year. Several months later, I finally had the chance to try this “psycedelic,” original, creative bagel at The Bagel Store in Williamsburg, Brooklyn.


The amount of creativity and labor put into this beautiful bagel is astounding. I watched a video on how this bagel was made from Business Insider. My eyes were glued to the screen of my phone during the “kneading” process. All those mounds of colors flattened, layered, sliced and rolled into bagels. 

I ordered the Rainbow Bagel with Funfetti cream cheese. After I cut this in half, I couldn’t help but admire the quality, texture and colors of the bagel and cream cheese. The look of the bagel reminded me of Play-Doh and the scent made me think of birthday cake from my childhood. 

The light savoriness of the bagel and sweetness from the Funfetti cream cheese was a delicious combination. It was the Funfetti cream cheese that tasted like a birthday cake. I could not stop eating this bagel and was glad that I got one for myself. (I had thought about sharing this with someone. Nope)! It was around breakfast time for me when I had this bagel. It felt like having an amazing morning dessert with my coffee. 


Even if you don’t have a sweet tooth like me, this Rainbow Bagel is definitely worth a try to look, smell and taste it. It’s different and made by a genuis.
